Are curds and whey the same thing as COTTAGE CHEESE?

  1. yes, it is cottage cheese.  Cheese is made from milk that has soured or curdled and then is heated gently to a certain temperature and held at that temp for a certain length of time and then drained.  The simplest is cottage cheese.  If the curds are pressed and seasoned and aged for a certain length of time, hard cheeses are made, as chedder, etc.  The different  age times, press times and seasoning and different kinds of milk is how different varieties of cheese are made.

  3. Curds are the milk solids and the whey is the liquid that is poured off.

As Ruth said, that is how you make cheese.  You can do that with Goats milk to.  We were told and old story about how we got blue cheese.  The shepard was watching the flocks [by the way sheep's milk cheese is Roquefort cheese]   he had his cheese wrapped up in a piece of bread.  The sheep ran away and he ran after them.

    the next year when he went up to pasture them he found his cheese and bread it had molded into the cheese.  When he ate it anyway found it was delicious.  Then blue cheese was born.  

  6. That is what they make cheese out of the curds.  They wash them and squish them in cheese cloth and hang in and old refrigerator.

    Adding spices and stuff.  Delicious.

  7. Yes, when the milk sours on the farm you add a little vinegar and heat it and it curds up.  Then drain it through cheese cloth and press the curds together and it becomes cheese.  rinse the curds with water and add a little salt.

    When using non fat milk or dry powered milk, the cheese is monterey jack white cheese.

    You cannot do this in a frost free refrigerator, but we had an old refrigerator that wasn't frost free and you can hang the bags of cheese from the rack for a few days and it is just like store bought cheese.

    We were not rich and made our own cheese from reconstituted dry milk power and had balls of cheese hanging in the old fridge.
