Here is what I am guessing they did.

Take a lot of still shots, then put them into Windows Movie Maker (or any other maker for that matter) then make the time lapses small.  That's how you get the choppy look, and you can dub in some music background too.  I am sure parts are still photos and parts are camera shots.
