What are some good fish recipes?

I recently started a new diet that calls for no meat except for fish dishes. Does anyone have some good fish recipes that are relatively easy and quick to cook?

    well garlic works well with everything.

    grill it in tin foil. it really depends on the fish you're cooking.


  2. Shrimp scampi is always delicious...at least I think so...pretty easy to do: just sautee some shrimp in a skillet in butter, herbs, and garlic. If you buy the pre-cooked shrimp, then all you are doing is heating it up - so it only takes a few minutes (until the butter is hot).

    If you eat the shrimp alone (not over rice or pasta) and you use a lo-cal butter, then it isn't too much.

I have an AMAZING fish recipe my guy friend taught me, the way I make it is not low cal but if you make sure everything put into this IS in fact low fat low cal then it very well could be but OMG okay about half a cup to 1 whole cup of milk ( non fat for you of course :] ) at the bottom of a saucepan, then set your fish on it ( this is done to make the fish moist ) , then you mix together butter and minced garlic and pour over it, cover with tin foil and put it in the oven for about 20 minutes... mmmmm this is SO good.. oh yeah btw its salmon!!!! salmon is what i use anyways. i have cooked tilapia this way also. hope you enjoy it!

  4. Pan Fried Trout With Mediterranean Style Vegetables

    Ingredients

    8 small or 4 large fresh trout

    1 tablespoon onion pepper

    Salt

    3 tablespoons olive oil

    4 sprigs fresh thyme

    4 tablespoons freshly squeezed lemon juice.

    2 tablespoons clear honey

    To complete:

    2 cloves garlic, crushed

    1lb leeks, washed, trimmed and sliced

    1lb courgettes, washed and sliced

    1 tablespoon chopped oregano

    1 lb boiled potatoes

    Method

       1. Rinse the trout fillets and pat dry with kitchen paper, Liberally sprinkle both sides with onion pepper and salt.

       2. Heat 1 tablespoon of oil in a grill pan and grill the trout for 2 – 3 mins on each side.  Add the thyme, lemon juice and honey and grill for a further 2 – 3 mins.

       3. Meanwhile, heat the remaining oil in a large pan.  Add the garlic, leeks and courgettes and stir fry for 5 – 7 mins.

       4. Stir the oregano and serve with the trout and the boiled potatoes.

I'm from Alabama.  Fishing is my family's pastime and we always have eaten a LOT of seafood.  I don't know where you live, but there are basically two types of fish: flaky white meat fish (snapper, grouper, trout, bass, crappie, catfish, flounder, cod, etc.) and oily dark meat fish (salmon, tuna, bonita, mackerel, swordfish, shark, etc.).  If you're going to fry it, white meat fish is best.  Grilled, broiled, or raw, dark meat is best.  All fish are relatively low calorie to begin with--the meat itself, unlike those of most terrestrial animals, contains very little fat.  So the only calories you'll have are those that you add.  Fish recipes can be as complex or simple as you want.  One really easy and healthy one is just baking with citrus flavor.  I've always used snapper, triggerfish, or bass for this one.

    Get a fish--whole or fillet is fine.  Put some olive oil on a baking sheet covered with aluminum foil, put the fish on top of that.  Add whatever spices and herbs you like (rosemary, garlic, work well) to the fish.  Cut a lemon and squeeze the juice onto the fish so that the whole thing gets some.  Add salt to taste.  Bake the thing anywhere about 325 till its done.

    Soaking it in milk before you cook it helps reduce the 'fishiness.'

  6. shark marinated in Italian dressing for 6 hrs, then baked in oven at 350, you can use other fish too but shark taste very good that way!

  7. Wow, tough diet. If you want to stick to it, you'll need to have a fair number of vegetarian dishes to suplement. I can't imagine fish 7 days a week. More about that after answering your question.

    As for the fish, it mostly likes to be cooked quickly and simply. Most filets can be pan-fried in a little butter or oil with nothing more than salt and pepper to season it, squeeze of lemon when you serve it. A thicker piece will take a bit longer, but it needed be more complex. Fish flavors are mostly pretty mild.

    Here's my general opinion (which you can certainly ignore): Diets don't work. Starting a diet almost inevitably means going off a diet. Whether to lose weight or whatever reason for this change, make it a real change of your lifestyle, one you can stick with.  

  8. Fish Pouches (fish in parchment)  This is my absolute favorite way to cook fish, it's very easy to do, the clean up is just to throw the parchment away, it is very low cal as you can cook it w/ virtually no fat and it's beautifully presented.  I have tried many different types of fish and flavors to add (ie: asian etc) Added bonus, everything you want for veggies goes right into the pouch too.  Google fish in parchment and there are many recipes there is even a video on you tube on how to do it. I really hope you give it a try, you'll be amazed at how easy and tasty it is
