Question:

What can I eat for dinner??? ?

I don't eat fish of any kind, I don't eat meat with fat on it or meat off the bone. I love vegetables like Broccoli, Green beans, Corn, Carrots and Celery but my boyfriend is exactly the opposite. The only veggies he will eat is corn and he loves chicken wings and stuff like that. So I make him something and me something different everyday otherwise we eat spaghetti or hamburger helper or something simple like that but we are getting burnt out on meals like this and we are trying to find something else that we will both like to try. We were thinking of something like chicken and rice, or some type of vegetable less cassarole. I need some suggests on a few meals we can make. All ideas are appreciated!!

Gee-sh I'd say something is going to have to give here on both sides...if you want to keep him around for a while (health wise) he should start eating more veggies...as far as no meat with fat or meat off the bone - that sounds too picky - cut the fat off. Compromise is necessary in every relationship.

    What do you do when you have pizza? pick off the pepperoni and sausage?

    How about a nice NY strip steak with potatoes and broccoli?  You can trim any excess fat off the steak - normally NY strip is very lean.

    Remember if you don't have any fat on pork chops or steak it will be very dry - think of the difference between eating a chicken breast vs. a chicken thigh or leg... then try re-heating them in the microwave - the breast has hardly any fat on it (especially if you take the skin off) and it will be very dry - not the leg or thigh

    How about pork chops with green beans and mashed potatoes with brown gravy - easy meal

    chicken parmigian (spelling) with chopped broccoli and pasta shells seasoned with Parmesan cheese & olive oil

  4. Make you a big pot of chicken noodle soup.  Use chicken b*****s they easy to cut and lots of veggies, Carrots Celery onion Leeks potato maybe, chicken broth and seasoning.  Good stuff  

  5. You can make vegetables salad with chicken include it in salad ,too.it is better,i think.

    Spinach Enchiladas

    1 tablespoon butter

    1/2 cup sliced green onions

    2 cloves garlic, minced

    1 (10 ounce) package frozen chopped spinach , thawed, drained and squeezed dry

    1 cup ricotta cheese

    1/2 cup sour cream

    2 cups shredded Monterey Jack cheese

    10 (6 inch) corn tortillas

    1 (19 ounce) can enchilada sauce

    DIRECTIONS

    Preheat the oven to 375 degrees F (190 degrees C).

    Melt butter in a saucepan over medium heat. Add garlic and onion; cook for a few minutes until fragrant, but not brown. Stir in spinach, and cook for about 5 more minutes. Remove from the heat, and mix in ricotta cheese, sour cream, and 1 cup of Monterey Jack cheese.

    In a skillet over medium heat, warm tortillas one at a time until flexible, about 15 seconds. Spoon about 1/4 cup of the spinach mixture onto the center of each tortilla. Roll up, and place seam side down in a 9x13 inch baking dish. Pour enchilada sauce over the top, and sprinkle with the remaining cup of Monterey Jack.

    Bake for 15 to 20 minutes in the preheated oven, until sauce is bubbling and cheese is lightly browned at the edges.

    1 orange

    1/3 cup Hawaiian stir-fry sauce

    1 tablespoon packed brown sugar

    1 package (1 pound) seasoned turkey patties

    1 bag (16 ounces) fresh stir-fry vegetables

    1. Grate 1 teaspoon peel from orange. Peel orange; discard peel. Cut orange into thin wedges or slices.

    2. Mix stir-fry sauce, brown sugar and orange peel.

    3. Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook turkey in skillet about 3 minutes on each side or until light brown.  

    4. Move turkey to one side of skillet. Add stir-fry sauce mixture and vegetables to other side of skillet; stir well to coat vegetables with sauce.

    5. Heat to boiling; reduce heat to medium. Cover and cook 10 to 12 minutes; stirring occasionally, until vegetables are crisp-tender. Stir in orange wedges. Serve turkey topped with vegetable mixture.  


  9. The ultimate dirty rice. The mutha of all dirty rice. It is very easy.

    Cut a whole chicken up into 8 pieces. Sprinkle it liberally with seasoned salt. Include the gizzards and everything. Cover the meat with chicken broth and simmer the pieces till they are tender. Add 2 cups of rice and some sliced Kielbasa sausage. Cover and turn down low. Great tailgate food.

    Easy Shrimp Creole: Salsa,shrimp, and one bay leaf simmered. Served over minute rice. Takes less than 15 minutes.

    My new fav takes 3 minutes to fix. one corn tortilla grilled 1 minute add one split in half hotdog microwaved on high for one minute. 1 slice of kraft cheeze.

    Since I use Hebrew national hotdogs, I have deemed it to be a Hebrew Korndog (k is for kosher). What you do is grill the corn tortilla for 1 minute each side till warmed through. lay a slice of cheeze on it. Lay the hotdog on there and roll it all up. Grill it on both side an additional minute.

    Rice and broth are added to sautéed chicken, onion, garlic, and mushrooms for a simple entrée that requires only one pan.

    Ingredients

    1 tablespoon olive oil

    1/2 cup chopped onion

    1 teaspoon bottled minced garlic

    1/2 teaspoon dried thyme

    1 (8-ounce) package presliced mushrooms

    3/4 pound skinless, boneless chicken breast, cut into bite-sized pieces

    1/2 cup dry white wine

    1/2 teaspoon salt

    1/4 teaspoon freshly ground black pepper

    1 cup uncooked instant rice

    1 cup fat-free, less-sodium chicken broth

    1/2 cup (2 ounces) grated fresh Parmesan cheese

    1/4 cup chopped fresh parsley

    Preparation

    Heat oil in a large nonstick skillet over medium-high heat. Add the onion, garlic, thyme, and mushrooms; sauté 5 minutes or until onion is tender. Add chicken; sauté 4 minutes or until the chicken is lightly browned. Add wine, salt, and pepper; cook 3 minutes or until liquid almost evaporates.

    Stir in rice and broth. Bring to a boil; cover, reduce heat, and simmer 5 minutes or until liquid is absorbed. Stir in cheese and parsley.
