They find the ingredients in food.  Some do research to find out what your body needs or doesn't.  How much they make depends on who employs them. Private companies pay better than institutions or research.

Food chemistry is the study of chemical processes and interactions of all biological and non-biological components of foods. So a food chemist studies chemical processes and interactions of all biological and non-biological components of foods or making food and checking if it's safe to eat.

As for me, they make millions.
