What goes well with duck fat?

Question

I'm going to cook some duck and I know I'll have some left overs from it, mostly drippings, stock etc. So what goes well with duck so I can combine it with the left overs to make some soup or stew or maybe something even better than that?

french fries are amazing!!! fried in duck fat.

Roasted or fried veggies of any kind are great in duck fat.

Just melt the fat, and toss the veggies (say, carrots, parsnips, potatoes, for example) with the duck fat, some salt, pepper, herbs, garlic, etc.  Roast 'em up and enjoy!
