If they're stuffed with rice, then I'd say buttered egg noodles. Or mashed potatoes/roasted potatoes, lima beans, corn on or off the cob, applesauce, green beans, carrots, a green salad, dinner rolls and ..... say, what time should I be there?

Quinoa/rice/barley

Green salad

Sauteed veggies (red onion, asparagus, squash, mushroom)

Small side of pasta with pomodoro sauce or agli e olio

French or Italian bread

Soup (minestrone, lentil, french onion with veg stock)

My stuffed peppers have corn, rice and meat.  So all I do is have a salad and some nice crusty bread.
