Generally it means you have accumulated enough credits in two separate fields to earn a degree in each one. Sometimes that's fairly easy if they are related ... such as the various therapy degrees you listed. Other times that's more difficult if you are looking at say math and history. When you go for a dual degree, it usually affects your electives.
