  1. Chicken Poppy with steamed rice and buttered corn

    4 bone-in b*****s of chicken (boiled in 3 cups of water and chunked-Save liquid for rice!)

    2 cans cream of chicken soup

    1 -16 oz container sour cream

    1 1/2  tablespoons poppy seeds (don't leave off)

    1 (8 ounce) package townhouse crackers, crushed

    1/2 cup butter, melted

    Preheat oven to 350 degrees F (175 degrees Celsius).

    In a bowl combine cream of chicken, sour cream,poppy seeds Stir until well blended, Addc chicken pieces, then transfer mixture to a 9x13 inch shallow baking dish. Melt the butter  in a small saucepan over low heat. Stir crackers into pan of melted butter. Sprinke evenly over the chicken.

    Bake chicken in the preheated oven for 30 minutes, or until heated through and lightly browned on top.

    Cook 1 cup of rice with 2 cups water from cooking chicken.

    Microwave frozen corn for 5 minutes add 2 tablespoons of butter.

    Quick, easy, and delicious.


  2. Ribeye steak with a creamy peppercorn sauce. Served with homemade, seasoned potato wages, mushrooms and onion rings.

  3. Meat loaf, mashed potatoes and a vegetable...Papa likes corn, I like peas. Glazed carrots are good too.

    2 lbs lean ground beef

    1 medium chopped onion

    2 eggs

    1 8 oz can tomato sauce

    4-5 splashes of Worcestershire sauce (I  never measure this...I just splash it in)

    about 3/4 of a stack of good saltine crackers, crumbled

    You want a consistency that is not too dry, but not sloppy wet. Add more crackers if it's too wet. Add some ketchup if it's too dry.

    Mix all the ingredients well. Form into a loaf shape on a baking sheet with edges, because you will get juice out of it.

    Bake at 350 degrees F for an hour. Remove from the oven and slather the top with 1/4 cup chili sauce mixed with 1 Tablespoon of brown sugar. Bake another 10 minutes.


  4. meatloaf with lean ground beef and italian sausage, and mac and cheese and green beans(fresh).

    MEATLOAF

    Mix your ground beef with your italian sausage and egg, italian bread crumbs salt and pepper, onions and green peppers diced. mix it together and bake in a loaf pan until done.

    MAC AND CHEESE

    cube the Velveeta and Cheddar. Boil macaroni half way.(it will cook the rest of the way in the oven). Mix drained macaroni with cheese and salt and pepper egg, and evaporated milk together in a mixing bowl. Place mixture in a casserole dish and bake until golden and bubbly.

    GREEN BEANS

    saute'  onions(red) in a skillet with olive oil and 1 tbsp of bacon grease and washed green beans cook for about 15 minutes they will still be crunchy!

  5. grilled chicken alfredo.  marinated chicken strips in a half and half mixture of water and Dales steak sauce for three hours. take strips out  of mixture and season with pepper,creole season, a little bit of garlic powder.  grill.  Then I take the Lipton's alfredo mix in the bag(sauce and noodles) and cook. You can cut the chicken up and mix with alfredo or serve it seperate.  I like to mix the two.  make some green beans and french bread.    

  6. Hamburger patties with rice-a-roni. Inexpensive, too.
