  1. Souse is a former of pickling, done to meats like beef and pork and even with fish like herring, sardines and other small fish.

    Like pickled herring it is done in a vinegar and spiced solution and with meats it is more like corn beef or cottage roll even Irish bacon which is raw and not smoked in similar. It has to be boiled and is served much like a corn beef or brisket with veg and is a nice hearty winter meal.
