  2. Here is a fast and hard rule to follow and is always true...

    If it has the words "round" or "loin" in the name then it's LEAN.

    Filet mignon is NOT LEAN.

  3. Filet. The bacon is there to add flavor and moistness, because the meat is so lean it tends to be dry. But the bacon usually doesn't taste very good, so just peel it off and eat the steak. Don't order it more done than medium to further combat potential dryness.

The leanest cuts of beef?  Round steak (pretty tough, needs to be braised or marinated, thereby increasing the fat content.. but at least if you use olive oil, its mono-sat rather and than saturated) or the lowest of all, filet mignon (i.e. tenderlioin or fillet) . In a restaurant .. its the fillet. Perhaps, if you can find it, a hanger steak a small leaner steak popular in France and some America "French Bistros" However, filet while being extremely tender has little flavor, so its often served with sauces (i.e...= BUTTER)  or in sometimes wrapped in bacon (a crime against humanity as far as I am concerned).   The problem is beef needs fat to develop flavor.  And marbled fat preferable (i.e. evenly distributed in the muscle).   So, here is my choice. When cooking at home, my wife and a I buy a 6 to 8 oz portion of the best marbled strip steak (NY strip, Kansas Strip etc.. depends on which part of the country you are from)  and split it.  That way a get a morsel of yummy steak rather than a lot of flavorless or tough steak.   I  pull the same stunt in a restaurant .. split a smaller choice steak between the two of us.

  6. A sirloin is going to be fairly lean, usually with very little marbling. I prefer them for that reason - the fat grosses me out.

  8. Filet is the leanest cut of meat you can get as a Steak in a restaurant, their is nothing leaner.  and If Wonderwall knew anything about meat he would know that Filet is a steak cut from the tenderLOIN!!  If you like your meat well done or even medium well do NOT order a filet.  

    I personally like a Filet, I am not a big beef eater and I like mine med rare, which is the preferred temp for a steak to be cooked to by Chefs.  

    Also if you are afraid of being tasteless you can you ask to make sure it is seasoned, however most Chefs season the beef before they cook it.
