  2. My boys really like it when I make pizza.  

    First I cook a pound of ground sirloin with chopped onion, garlic, parsley, oregano, salt and pepper.  Then I add some grated parmesan cheese, and a can of tomato paste...you really have to work it in...it will be thick.

    Then I get a pillsbury pizza dough crust. Drizzle olive oil on a rectangular baking sheet.

    Put the dough on the baking sheet, poke holes in the crust, drizzle olive oil up and down the crust, sprinkle rosemary, salt and pepper--Kosher salt is best or coarse salt.

    Bake your crust for 10 minutes.

    Remove crust and add meat mixture, top it with mozarella and bake until cheese is melted.

    I got this recipe from tv several years ago...can't remember which one, but my boys love it when I make this.  I serve a salad with it.

    The recipe calls for fresh herbs but I use dry ones a lot since I don't always have fresh ones.  If you use dry, rub them between your fingers before you add them in...but the fresh is better.

    They also love taco soup.

  3. Nachos; with salsa, tomato, Doritos nacho chips and with cheese that's cheesy as well as crunchy :)

    Use Doritos nacho chips(The yellow packet) and on a tray lined with foil, and on top of that a layer of non-stick baking paper place a layer of chips. Chuck on the salsa(use any to your liking) and evenly spread some shredded cheese.

    Then put on top another layer of chips and repeat, with the salsa place some finely chopped tomatoes or they can be thinly sliced, doesn't matter.

    Then when you've used all the chips, on your final layer put extra cheese and then place the tray in the pre-heated oven about 150 degrees celsius, or higher if you want crisper chips.

    The all the cheese on the top layer is melted and had bubbled and looks slightly crunchy take out the tray and enjoy!

  6. Mock Chinese.

    I use spaghetti squash, mushrooms, snow pea pods, bok choy, water chestnuts, green onions, soy sauce, garlic, salt and pepper, and some sort of meat.  Put with a side of brown rice with mandarin oranges and almonds.

  7. Its actually a basil vinaigrette salad dressing. My husband LOVES it, and back when I was a kid it was my assigned job. I had to make it once a week so I've completely mastered the art of salad dressing creations and can literally just throw random things into a blender and make any kind of dressing.

    Everyone always has me bring salad to parties, and I usually jazz up my normal basil vinaigrette by substituting things like mandarin oranges, huckleberries, raspberries, or whatever in place of the basil.

    My other one is spaghetti with home-made spicy tomato sauce. I'm the only person who can get it spicy enough that my husband won't complain about it being "bland" (which usually by that point its too spicy for my own taste buds lol).

    1. sausage  pie ( my all the time meal)

    Ingredients (serves 4)

    1kg Desiree potatoes, peeled, roughly chopped

    40g butter, chopped

    3/4 cup milk

    1 tablespoon olive oil

    1 brown onion, sliced

    750g pork or beef chipolata sausages

    1/4 cup tomato sauce

    1/4 cup barbecue sauce

    1 tablespoon Worcestershire sauce

    35g packet French onion soupmix

    1 tablespoon plain flour

    1/2 cup grated tasty cheese

    Method

    Place potatoes in a saucepan and cover with cold water. Bring to the boil over high heat. Reduce heat to medium-low and simmer for 20 to 25 minutes or until tender. Drain. Return to pan. Add butter, milk and salt and pepper. Mash until smooth.

    Preheat oven to 200°C. Heat oil in a deep frying pan over medium heat. Add onion and cook for 3 minutes or until tender. Add sausages and cook, stirring occasionally, for 3 minutes or until browned. Whisk tomato sauce, barbecue sauce, Worcestershire sauce, soupmix, flour and 3/4 cup water in a jug. Stir into sausage mixture and bring to the boil.

    Spoon sausage mixture into an 8-cup capacity casserole. Top with potato. Sprinkle with cheese. Bake for 25 to 30 minutes or until cheese is golden. Serve.

    Eye fillet with celeriac & yoghurt remoulade ( my impress meal)

    Ingredients (serves 4)

    1kg piece of beef fillet, trimmed

    2 tsp olive oil

    Juice of 1/2 large lemon

    1 small celeriac bulb (about 550g - see note), peeled, quartered

    1 tbs low-fat mayonnaise

    1/4 cup (3 tbs) natural skim-milk yoghurt

    2 tsp Dijon mustard

    2 tbs chopped flat-leaf parsley leaves

    2 tbs finely chopped chives, plus extra to garnish

    280g steamed baby green beans, to serve

    Method

    Preheat oven to 200°C. Season beef with salt and pepper. Heat oil in an ovenproof frypan on high heat. Brown beef all over for 2 minutes, then transfer to oven for 35-40 minutes for medium-rare, or until cooked to your liking. Cover loosely with foil and set aside to rest for 6-8 minutes.

    Meanwhile, place the lemon juice in a bowl. Use a V-slicer, mandoline or coarse grater to finely shred celeriac into the bowl. You need about 1 1/4 cups (300g) shredded celeriac. Combine mayonnaise, yoghurt, mustard, parsley and chives in a large bowl, season with salt and pepper, add celeriac and toss well to combine.

    Slice beef and serve with celeriac and beans, scattered with chives.


  9. Honey Chicken

    Just rub chicken fillet with salt. Then marinate with soy sauce, loads of honey and pepper. It might sound really salty but it isn't.

    Pan fry (or bake if you have an oven) and serve on its own or with rice. You may serve as canapes. Yummy to the tummy!!
