Question:

What kind of dressing?

My fiance and I are making dinner for his parents tomorrow night. We are making a salad with mango, kiwi, pineapple, mandarin oranges, chicken, romaine lettuce, and cucumber . The cheese is feta. Our problem is we don't know what kind of dressing to get to go with it. Please help!!

  1. Kraft just came out with a new Raspberry vinaigrette that would probably go very well with your salad...Kens also have a good one.but,it isn't quite as sweet .I would choose the former.

    Corn bread stuffing might go well with your meal.

    It is great on anything with feta. I just made a salad almost like yours a few nights ago.

  11. Smash the kiwi into a pulp, add balsamic for acid and some fresh lime zest.

  14. Do a lemon vinaigrette, with extra virgin olive oil and some herbs-- maybe mint or parsley.

  15. i like rasberry vinagrette, but maybe that is too much fruit for you, idk.  

  16. a light vinaigrette.  maybe some champagne vinegar with a top quality olive oil, a little salt, a little white pepper, thyme, and basil.

    another option is a strawberry vinaigrette, just don't know how to make that one, or where you might be able to buy it.

  17. If anything I would go with just a light balsamic viniger no oil it will weight down the fruits.

  18. take some of the mango to make 'chilli mango dressing' only mild but it gives it a little spice and goes very well with chicken,the cheese doesnt sound right to me perhaps something creamier like brie ( but thats my opinion only ) Good luck with the in-laws! xx ohh,you could combine nuts,pine or cashew to add a different texture and giving  the salad more depth...

  19. What about like a lemon dressing?

    1/2 cup dry white wine

    1 tablespoons lemon peel

    2 tablespoons fresh dill

    2 tablespoons olive oil

    2 cloves garlic

    1 tablespoons Dijon mustard

    1/2 teaspoon coarsely ground pepper

            Place everything in food processor or blender.

            Mix until smooth.

    Or Something with an orange flavor!

    1 cup plain yogurt

    1/2 cup fresh orange juice

    1/4 cup honey

    2 tablespoons orange zest

           Place in blender and mix until smooth.

  21. You have a lot of sweet flavours in there so you want to offset that. Something mild.. balsamic without being too strong! Look for a light colored dressing... less flavour in them and something without "pulp"

I think you would enjoy one of these 2 dressings.  They're both very easy to make and nice and light to go with your salad ingredients.  I'd probably lean toward the Almond-Orange dressing.  In fact, you might like to add some almonds, walnuts or pecans to your salad for the extra flavor and crunch!

    ALMOND - ORANGE SALAD

    1/4 cup salad oil

    2 T. white wine vinegar

    2 T. sugar

    1/4 tsp. almond extract

    Torn Greens - leaf or bibb lettuce, spinach, etc.

    2-3 medium oranges - remove rind and slice or chunk

       (or use mandarin oranges)

    1 cup celery - sliced

    2 T. onions or chives - sliced

    1/3 cup toasted almonds

    Mix dressing together.  Wash greens and arrange on individual serving dishes.  Top with the other items, then add with dressing.  Or toss together in one bowl and serve.

    CITRUS DRESSING FOR SALADS

    1/3 cup fresh Orange or Grapefruit Juice

    2 Tbs. Balsamic Vinegar

    1 Tbs. Olive Oil

    Salt and Pepper to taste

    In a bowl, whisk together all the ingredients.  Use on salads of your choice.


  23. I had a salad kind of like that at Earl's. The dressing was Japanese sesame. Very good.

    If you don't find the ready to go dressing, here's a recipe

    1/2 cup sesame oil

    1/4 cup honey

    1/4 cup vinegar

    3 tablespoons toaster sesame seeds, ground

    2 tablespoons lemon juice

    2 cloves garlic, pressed

    Directions

    1 Combine ingredients in jar and shake well.

    2 Refrigerate until ready to use.
