My friend is getting married Saturday night. She asked instead of gifts to bring food for the reception. Iam in a sticky spot because we are going to be moving this week, I have 2 little kids and no baby sitter, and have NO idea how I'm going to cook anything since we will be in the middle of moving. She asked we all bring mexican food, I need help with ideas of what to bring?? Something quick and easy? I can't afford to go to a restaurant and buy a bunch of food right now. Help!!!

  1. Take a big empty pot to your local Mexican restaurant, they fill them with menudo, or pozole, or birria for a price, but make sure you call ahead and make sure they have it ready for you, also, I would pick the best tasting restaurant. (for like $20.00 I can fill a pot to feed 8 with menudo or birria, if you want more the more you get, the less it should cost.

  2. I make a mexican casserole that tastes wonderfull... the best part is it is easy... and even better you only need 2 pans... one for on the stove and one for the oven...

    what you need:

    3 lbs ground beef

    2 med. onion (chopped)

1 can cream of mushroom soup

1 can cream of chicken soup

1 can of diced rotel tomates

1 can of ranch style beans

    1 lbs of velveta

    8 oz. of sour cream

1 lb of cheddar cheese (grated)

    2 bags of tortillia chips

    in a nice size pot

brown ground beef and onions until ground beef is done

    drain off the fat

then add both cans of soup, rotel tomates and ranch style beans and mix around

    then add the velveta cheese

let it cook for a bit and when everything is good and mixed together and the velveta is melted, turn off burner and add the sour cream...mix in well..

now you need a 9X13 pan if you have one that is a little bigger that is even better.. or you can use two smaller ones...

all you do now is put a layer of the meat mixure in the bottom of the pan and then put a layer of chips on top continue alternating meat and chips to top of pan make sure you end with the meat mixture on top.... when done sprinkle a generous amount of cheddar cheese on top... bake at 350 degrees until the cheese is melted good on top...

then serve with the rest of the tortillia chips...

it is the best and very filling....

and I know it probably don't sound like it but it is very easy to fix.... and not a lot of dishes to wash after....  Good luck !!

  3. Any type of pasta salad should be easier and less expensive.  The shrimp is great with cheese sauce. Boil up some pretty pasta salad and add shrimp and provolone cheese with heavy whipping cream.  Then add small condiments like celery salt, and white pepper.  Dont' forget to garnish with parsley. Season to your likings, it's really an awesome dish.

  4. How about going to the grocery and getting a 7 layer dip already made, and some chips.

Or you can bring refreshments. such as soda, lemondae or something else to drink.

  5. make a bunch of quesidellas.

all you need is cheese and tortillas and you can make them in advance and warm them up

you can add chicken or ground beef as well

  6. How about some guacamole and chips.  A quick way to make more out of store bought:  buy 2 containers store bought, add: 3 avocados diced, chopped cilantro, a diced jalapeno pepper seeded, diced green onions. lemon juice to keep from browning.  Simple yet looks like homemade.

  7. Hey Hon, I would just take chips and Salsa, the colored chips would look nicer, and maybe some cheese sauce. That would be easy and not expensive, but good luck and have fun, and you could take a pinata for the kids at the wedding

  8. Salsa or guacamole.  Easy, cheap, no cooking!  :D

  9. Taquitos--they have beef & chicken flavor.   Your friend should understand your situation so she probably won't mind lending her oven so you can cook them fresh for an appetizer!
