I agree her favorite dinner is probably ideal.  Most italian dishes are also pretty easy: Lasagna, stuffed shells and speghetti are ones I've used to entertain and they are usually always a big hit.  Serve it with a nice colorful green salad and bread.

it really depends what she likes and if she's not watching her weight.
