making banana nut muffins..i need 3 eggs but i have none..

  1. A few suggestions from a recipe site I use. Each replaces one egg, so multiply by three if you have any of those ingredients to hand.

    2 tablespoons cold water (or milk)

    1 tablespoon cornstarch

    Mix together into a paste

    Or

    3.5 tablespoons milk plus 1 tablespoon custard powder

    Mix & add

    Or

    1 tablespoon baking powder

    1 teaspoon baking soda

    1 tablespoon flour

    2 tablespoons water

    Whisk till foamy. One mix makes one egg.

    You could try adding some vanilla essence?


  2. mayonaisse is made with oil and eggs- the perfect substitute. For three eggs, use 3/4 cup mayo, and eliminate the oil in the recipe- if it does not call for oil, it will still be OK, mayo will make it moist.

  4. For muffins you kind of need eggs. Eggs keep all of the ingredients together, otherwise they wouldn't bake at all.

    Other ingredients just wont be the same and will just make the  banana nut muffins taste awful and spoil all your hard work...

    Is there a store nearby? You should go and get some.

    Or if you have a close neighbor or someone near you ask them for some eggs.

  9. There is no substitute for eggs. You can't make banana  nut muffins without eggs. The flour won't rise without the eggs, and it tastes terrible. Go get eggs!
