The sitting fee is what the photographer is charging you for the work that he is doing.  Setting up the lights and your pose so that your photograph is flattering.  There is more to portraiture than pressing the shutter button.  The sitting fee could also be called a creative fee.  A sitting fee is also charged in the event that for whatever reason, you decide not to buy any prints.  He reserved that time for you, counting on print sales, and he did all that work with them lights and poses, ect.. would you work for nothing?  That is why deposits and sitting fees are usually non refundable.

a sitting fee is the up front amount you pay the photographer when you go to get your photo's taken. Photographers usually have a rate per hour, but instead they may charge a sitting fee to cover the initial time spent with you.

It's what they charge for you to sit in their studio and have your picture taken.  It's a charge apart from any pictures you may buy.
