Why pomelo fruits sometimes taste bitter??

I am currently doing a project on pomelo fruits, can anyone tell me why pomelo fruits sometimes taste bitter?? Some articles said it was caused by the membrane of pomelo fruits, can anyone tell me why the membrane taste bitter?? what is the struture of membrane of pomelo fruits??

The exact reason why pomelo fruits are bitter is not known.  However, it is speculated that pomelos contain deratives called furanocoumarin.  These derivates are also found in grapefruits and give grapefruits its characteristic bitter taste.
