Question:

"Authentic" (lol) Fajita Recipe Anyone?...?

I know its a Tex-Mex dish but I'm hoping that someone out there that has a backround in mexican cooking can help. I was in El Paso a few years ago and nothing beats their fajitas... Thanks Much! PS I'd prefer a chicken recipe because everyone I know like chicken better.

I just made steak fahitas and they were delicious but chicken works great too.  Buy some skinless, boneless chicken b*****s.  Place the b*****s in a ziplock bag.  Add some store bought marinade if you like, or make your own:  Put in some olive oil and some lemon lime juice, or rice vinegar.  The point is to have an oil and an acidic.  A little soy sauce if you have it.  Add your favorite spices.  I would add tarragon, garlic powder, basil, parsely, paprika, pepper and a little salt (but skip the salt if you've added soy sauce - it has plenty).  Let marinade for at least 1 hour.

    Remove the chicken from the marinade and cut into strips.  In a hot skillet.  Put in some olive oil, enough to cover the bottom of the pan (you can use vegetable oil).  When the oil is hot, put it strips of onion and bell peppers, green, red, or yellow or all 3.  After about 5 minutes, add the chicken strips.  Saute' all until done but not over-cooked.  When it's ready, dinners ready.

    Take a soft flour tortilla and place in a hot, iron skillet, about 15 seconds per side, or heat them up 2 at a time on a paper towel in the microwave.  Fill your warm tortilla with some of the onions, peppers and chicken and then add your favorite toppings (which you have already laid out):  Sour cream, guacamole, shredded cheese, jalepeno's, and shredded lettuce.  Make them with steak the same way.  Use your favorite cut but flank steak is traditional.  Just marinate longer and massage the meat occasionally to make it tender. That's it!  Bon apetit!
