  1. no don't remove the skin, remove stone,  cut them into quarters, they will all break up.

  2. Cut a cross in one end of the plums.  Plunge into boiling water for 20 secs, then into cold.  Skins will slip off easily.

  3. lay out your plums whole on a baking tray and sprinkle some sugar over the top, bake for 25 minutes at 180C, but reduce the temperature if burning begins. Leave to cool and then squeeze the plums to the fruit just pops out of the skin, then cut out the stone and follow the recipe as you would have done, however cooking time can now be reduced

  4. bring a large pot of water to a full boil...at the end of each plum (not stem end) make 2 slices to form an X...drop plums in boiling water for 30 seconds...remove with slotted spoon and drop into ice water...peel plums starting at the X.

  5. I make plum jam most summers andI have never even thought of taking the skins off - they taste delicious in the jam!

Taking the stones out, though is another matter.  You can do this before hand by cutting each fruit in half and twisting, but it's messy and time consuming.  I prefer to gently simmer the fruit and then find the stones, removing them with a slatted spoon, sometimes with the help of a fork, to make sure I'm not chucking plum flesh away. Nobody minds a few left in, because there usually are one or two to every pound!

Wish I could find some plums this year to get going on the jam myself.

  6. Yes, peeled is better - just put them in boiling water for a minute or not even a min and then put it in ice water.

  7. The same as with tomatoes - put them on boiling water for one minute then plunge them into ice cold water. The skins then split and are easy to peel off
