Replaceing chicken broth with vegetable?

I remember when i was like 10 my mom use to make this chicken broth noodles. Like she would boil it and then cook the noodles in it. I loved it so much. But i have been a vegetarian for a few years, and am woundering would it taste good if i used vegetable broth. Has anyone ever tried this.?? What do you think, sound good??

  1. It would work or you could also buy pastas that are already flavored.  Common ones are spinach, sundried tomato, and basil.

It's a natural replacement.  Of course you can do it.  When I make veg broth, I peel and slice carrots and onions.  Wash and slice celery.  Put everything in a roasting pan and bake in a preheated 325 F oven for 30 to 45 minutes.  Dump everything in a stock pot and cover with cold water.  Bring to a simmer, cover, and simmer for an hour.  Strain, adjust seasonings, and use with your noodles.

    Sometimes I like to add a bunch of chopped raw spinach into the pot after the other vegs are roasted.

  3. You can try it with vegetable broth. But you can also use vegan chicken broth or mushroom broth, it might taste closer to the real thing. Imagine has No Chicken Broth, Pacific has Mushroom Broth. You can make your own:

  4. There are vegan seasonings that mimic the chicken flavor--

    Bill's Chik-nish comes to mind.  This might be a tasty alternative also.

  5. Any broth-based soup is only as good as its ingredients. If the broth tastes good, the soup will taste good. If the broth doesn't taste good, the soup won't. You probably want a clear vegetable broth for this. Consider using one can of veggie broth, one can of water, and one bouillon cube. That'll give you some salt and seasonings that will remind you of the chicken broth. All broths have distinct flavors and veggie broths vary widely by brand.

  6. Just add the artificial chicken seasoning to your veggie broth and it comes out good. Just be warned that the artificial flavoring has MSG in it. It gives some people headaches.
