Restaurant recommendations in Delhi?

I'll be staying in Delhi for a bit come October. Present plans are to stay at the Oberoi Maidens Hotel in "Old" Delhi. Does anyone have any recommendations for a good place for an evening meal? Not surprisingly,we're keen on places that do practice good food hygiene.

On an semi-related note, we're definitely considering a visit to Bukhara over at the Sheraton Muraya during out time there. Any opinions?

Hi Dr. John!  Your question popped up in my e-mail and I had meant to write you - my friend (who is also a doctor, incidentally) just returned from a trip to India a few weeks ago.  He told me all about it,  but he didn't mention any specific restaurants.  I am seeing him next week (Thursday, I think) and will ask him for some recommendations for you.
