what do the following terms mean in a resturant?

server bank? , combined steps or consolidation? , full hands in and full hands out?

  1. Server bank is money the server keeps on hand so they can give customers change and break bills w/ out having to go to the bar or a manager. Some restaurants make this mandatory.

    Combined steps or consolidation? I've worked in Restaurant industry for about 16 years and haven't heard it used in those exact words. Probably means making good use of your time and multitasking while working. So that you're not running around wasting time.

    Full hands in Full hands out is something you hear at every restaurant. It means every time you enter the back of the house(kitchen area) you should have full hands. Pre bus tables, bring back dishes, etc.  And every time you leave the kitchen you should be running food or drinks to tables. I'd say it goes w/ combined steps and consolidation. Don't waste time walking back and forth w/ no purpose. Multitasking is key in the restaurant industry.


  2. Wow, I must be in the hills. I've worked restaurant for 20+ years, and I have no idea what you are talking about!!!

I looked around for the answers, but I couldn't find specifics.  I would guess the Server Bank would be where the food comes out for the server's to pick up...or maybe a combined tip jar (hence the word bank)  Combined steps or consolidation may be people in the kitchen working together to expedite orders quickly.  Full Hands In and Full Hands Out could be all staff in the kitchen all staff in the dining hall.  Just a guess, sorry.  Try to email Anthony Bourdain.
