what do the following terms mean in a resturant?

server bank? , combined steps or consolidation? , full hands in and full hands out?

  1. Server bank refers to, a wait person who receives  money at he beginning of their shift ,to give change to patrons paying for their checks! combined steps-- to do more with less steps, the last one, not sure of!


  2. Server bank is the money the server carries with them to make change for their customers when they pay.

    Combined steps means try to meet the requests of every table you can in one trip.  Don't get the water for one table, then go back to get catchup for another table, then go back to get drink refills for another table.  Grab all that suff at once while you're in the back and deliver it in the same trip.

    Full hands in and out means each time you leave the back or enter the back you should have something in your hands:  hot food, drinks, bread, refills, going out; dirty dishes, checks to be paid, empty glasses going in.

E mail Anthony Bourdain at www.anthonybourdain.com -  Try this.  I thought I posted an answer, I guess I forgot to submit it.  I think a server bank is where the food is placed for the server's to pick up, or a communal tip jar, combined steps and consolidation could be the kitchen staff working together to expedite orders, and maybe full hands in and out could be all staff in the kitchen and all staff on the dining floor.  Hope I helped.
