Russian tortoise eating question?!?

Question

I was on a jog and picked a bunch of dandelions for my Russian tortoise. but i'm not sure if he can eat only the yellow flower part, or if he can eat the stem too..

they prefer young dandelion leaves; they also love cabbages and smalled carrots and beet-roots – anything juicy; they don’t drink water actually; want more information how to keep them?
