  1. I used to wait tables at Ruth's Chris while I was in school.

    This is the place that showed the world how great a steak can be. Carefully selected and aged for tenderness. Cut thick to ensure juiciness. Seared to perfection at 1800 degrees gas oven. Searing the outside of the steak locks in the juices.  Seasoned simply with salt, black pepper and a touch of freshly chopped parsley flakes, because a steak like this needs nothing else. Topped with fresh butter that sizzles seductively on your plate, announcing the arrival of a great steak.

    They actually keep the plates in an oven at about 500 degrees.  You can use any sort of plate the can withstand high temperatures, for baking and such.

    WARNING:  These plate are extremely hot.  You need to warn your guests and make sure that you hold it with a folded towel.  And ask them to hold their napkins over their clothes so that the butter does not pop on them, until some of the sizzle subsides.


  2. What you describe sounds like fajita serving platters. they are usually cast iron oval plates that are placed on a wood board to not burn the table. it comes to the table sizzling. you can find them in most restaurant supply shows.

  3. Is it a metal plate held by a black plastic tray right underneath, tight fit?

    If so, then please check out kitchen specialty shops in your area,  or ask the wait person about them.
