  1. Just go buy an s-video cable, it provides better picture than composite.

If you do have to use composite, just buy a simple S-video to composite adaptor. They are all VERY cheap.

  2. I hate to tell you this, but your nice new graphics card is using old, almost dead technology. S-video is an old standard that can  only support standard definition 480p resolution. Further, S-video uses 4 wires and will only work with another S-video jack. If your TV does not have an S-video jack on it you can not use S-video. Your graphics card should have a VGA output which uses a 15 pin DIN connector. That is the best way to get the video to your TV, but if your TV doesn't have a VGA connector that won't work either.

That leaves you with plane old composite video. A yellow connector. The AV cables you have laying around are probably composite video cables with red, white, and yellow ends on them. The red and white are for stereo sound and the yellow is video.

The newer formats for video are component video (red, blue, and green connectors) and HDMI which is a single cable with 18 wires inside it.

In short you aren't going to solder wires together and get anything to work for you. Sorry.
