SPONGE CAKE ICING TROUBLE!?

I have the sponge cake, and I have cut it correctly into two. It's not burnt or anything. It has cooled down now and I am wondering how to ice it? I have no idea! I don't have any cream so I'm looking for something I can stick between the two halves as well as on top and which doesnt require anything with nuts. PLEASE HELP! It's for a friends's birthday tomorrow...

  1. How about a basic buttercream??

    I have been a pastry cook for many years, and for cakes that were ordered that did not want cream, this is what we would use as a substitute. ( and I promise you this is a BEAUTIFUL buttercream!)

    In a bowl beat together 250grams of unsalted butter with 2tbs of icing sugar, until light and fluffy.

    Gradually add another 1 and 1/4 cups of icing sugar, beating well in each addition.

    Then add 2 beaten egg yolks, and 2tbs boiling water, with a tsp of vanilla extract.

    Whisk until mixture is smooth and white in color.

    ( you could also use other flavorings rather than vanilla if preffered)

  2. Melt 1 tsp butter, add 1 tbsp cocoa and 1 cup icing sugar.

    Mix together (it will be like little balls), and add 1tsp vanilla.

    Add 3 tbsp milk to the mix and stir, then whip.

    You didn't say how big your cake was, if more frosting is required add more icing sugar and cocoa.

    Be very careful with extra milk add by tbsp.

    Frost.

    To sandwich your cake, spread jam, or berries sprinkled with icing sugar is lovely.

    6 eggs

    1 and 1/2 cups granulated sugar

    1 cup lemon juice

    1/2 cup butter softened

    1/8 tsp salt

    1 cup flaked coconut

    To prepare topping, in the top of a double boiler set over simmering (not boiling) water, mix together eggs, sugar, lemon juice, butter and salt. Cook over medium heat, stirring frequently, until thickened, 15 minutes.

    Transfer topping to a bowl; cool to room temperature. Cover with plastic wrap; chill for 1 hour.

    Place 1 layer on a serving plate. Spread one-quarter of topping over cake. Top with second layer. Spread remaining topping over top and sides of cake. Press coconut onto sides.

      

  4. if you dont have any icing, try confectioners suger and crisco, look up the recipe on google.
