Salad or Dish Ideas for Baby/Bridal Shower?

Anyone have an idea for a cheap and easy dish for a bridal/baby shower for about 15 people? It seems like everytime I make something for a party it ends up costing way more than I intend. I'm not cheap, it's just that all the office-related parties/presents have been adding up big time this past month and I need to be careful of my spending.

  1. Quiche is always good and cheap. Keep the ingredients simple and you shouldnt spend too much

    I would suggest a vegetarian sushi (rice costs about $2, sushi seeweed about $2, and vegetables about the same) rather than normal sushi because pregnant women cant eat fish i think... something like that...

    Also, try spinach and cheese rolls. All you do is mix up some spinach and cheese together (chop up the spinach well and wilt it first in boiling water) then fry up some leek or sring onion and add it to the mixture, spread a thin layer of it onto a sheet of puff pastry, roll it up, slice it (so you have a cinniman bun effect)  and pop it in the oven for about 20 minutes. they are really yummy and go down a treat!

    Other things you could do are

    a simple platter of cheese and crackers and olives,

    sanwhiches of exess ingredients from other foods you have made

    umm, I'm not too sure about anything else

    Can I suggest you ask everyone to bring a plate (if it is your baby bridal shower) it's what i always do because i dont want to spend hours slaving away in the kitchen or spending hundreds on food that may not be eaten

  2. As a quick little appetizer you could serve banana bites.

    4 firm bananas

    2 tbs. lemon juice

    2/3 C vanilla yogurt

    2 C flaked coconut

    Peel the banans and cut into bite sized slices. Dip each slice in the lemon juice and roll in the yogurt. Coat with the coconut and place on a tray with a toothpick in each one. Serve immediately or refrigerate for up to two hours.

  3. make a fresh veggie pizza.  Use a crecent dough, press it out in one piece on a cookie sheet.  Bake it off.  Let it cool slightly and combine one package of cream cheese, 1 cup of sour cream and a packet of hidden valley and smear completely over cooled crust.  Chop up fresh broccoli and tomatoes and sprinkle on top, then top with finely shredded cheddar.  Cut it into small squares using a pizza cutter and arrange on a platter.  It's pretty, inexpensive and people love it.
