Salad using Chickpeas (Garbanzos) popular in Australia?

Hi,

About a year ago I went backpacking through out Australia, and everywhere I went I seemed to be served a chickpea based salad. I believe sometimes it would have pineapple in it and was always vegetarian. It's apt for picnics and informal gatherings.

Might anyone have some recipees to share?

  1. I make one with couscous, chickpeas and some chopped sundried tomato and sundried capsicum (in oil) and a dash of orange blossom water (though still tastes good without it.)

    You can uses stock or water to soak the couscous. The I fry and onion, add the tomato chickpeas and capsicum till warn then stir through the couscous and add a tablespoon of orange blossom water.

I often make a salad with chickpeas in it, but have grilled chicken on top.  You could always leave the chicken out if you are vegetarian.  Just make a salad with 1 cup cooked or canned chickpeas, thinly sliced red onion, 2-3 cups mixed salad leaves, 1 small avocado, cubed, 2 tbs toasted pine nuts, 1 punnut cherry tomatoes.  Then, for the dressing, get a good handful of common mint and process with natural yoghurt, about 1 cup until mint is finely chopped and that's your dressing.  If you want the chicken I just bash a chicken fillet until then and marinate with garlic, lemon juice and zaatar, then grill and slice and put on the salad.

  3. Wow, that salad sounds nice. I don't think I've ever tasted it, though and I live in Australia!!
