Does anyone know a place I can stay where they won't steal my stuff?

The safest place to stay is Hotel Restaurant San José.

It is located at 30 de Marzo 37 (tel [phone]).  It is reasonably priced and should be less than  US$25).

San Jose de las Matas is not directly a tourist area, but very nice to walk around! ( been there) But you will find in the center of the little town a small hotel. There you can stay, but anyway I advise you to be carefull with your expensive stuff and never "show off" your jewelry or money, they are no thiefs but if you put cheese under the noose of a mouse......
