I know what you mean and have eaten it, and as you slice you get the different type meats for the birds,

the one we had was Goose, duck, wood-pigeon & small quail

Think you mean "Ten bird roast"

You stuff a large turkey with increasingly smaller birds,chicken, duck pheasant e.t.c.

HFW did it on River cottage.Looked tasty but not a good day for birds.

It's a Turducken.  (TURkey, DUCK, hEN)  I have friends who have tried it and they said it was great.
