Either really. Some days i like to dip my sausage in a bit of brown and some days i like to pop it in a bit of red.

I'm rather like dingdong - it depends what mood I'm in. I like plain old brown gravy with mashed potatoes usually. But a while ago I put bought green tomato pickles on them. They were great. I have yet to experiment with Thai green curry paste (mixed with two or three heaped tablespoonsful of unflavoured yoghurt) but think it might be nice. It went very well with leftovers from a rack of lamb.

And I have also tried mint sauce with lamb sausages.

I didn't find out about the wonders of looking things up on the Internet until about five years ago; these are only my own experiments.

After that it gets complicated.

Swiss Bratwurst are great with a home-made onion sauce.

Frankfurters or Wienerli are best with continental mustard (not the English variety).

Turkish/Spanish/Italian - they all have their special flavours and need the appropriate sauce.

Yes, This is really strange but I really like dipping my sausage in hot maple syrup, egg yolk, or ketchup. You also can't go wrong with white cream gravy.
