Schengen visa & insurance?

I'm going to Germany

I'm going to applicate for a schengen visa, but my travel insurance policy starts on 7th of April, but I my flight is on 5th of April (departure: 3:00 am-arrival: 9:30 am) ,

That's mean there is two days without insurance.

Do you think the Germany embassy will over look these two days ?

If no ...

Then can I change the date of starting the policy to the 5th of April ؟?

You can change the policy date to 5th of April and the German embassy does not care whether you have insurance or not
