Question:

School Starts in a week. Have any Vegetarian Lunch Ideas?

I've been a vegetarian for 2years an I'm sick of eating peanut butter and honey. I don't like most jellies so I'm not sure what to have. I don't know if I have access to a microwave because I'm starting middle school so I haven't seen the lunch room yet. Any ideas?

  1. cheese and crackers

    cold pizza (its actually good)

    a bagel (doesnt have to be toasted)

    pop tarts

    try crunchy peanut butter :]


  2. Ohman, there's so much more out there than peanut butter!  (As you'll see from the length of this reply.  Carnivore here, but cook for lots of vegetarian friends.)  Will you eat dairy products and/or eggs?  If so, you can balance a diet, NO problem at all.

    For right this minute, easy lunch ideas:

         Chickpeas (garbanzos---canned & drained are fine), mixed with chopped onions, celery, tomatoes, and/or cheese (try a nice Monterey jack or cheddar), with some dark greens (spinach, leaf lettuce, escarole---iceberg is tasteless and has NO nutrition)

         Chickpeas, pineapple tidbits, raisins, cut-up peaches OR apricots OR mangoes (or all---what's in the fridge or pantry?).  Add curry powder to plain (nonflavored) yogurt---make it zingy!---then add to the 'peas and drained fruit. Let sit a couple hours, then enjoy!

         Bulgar wheat (check the health or ethnic foods section of your store)---soak it according to directions on package.  Then make tabbouleh salad, which is a YUMMMMY combo of chopped parsley, herbs, cucumbers, tomatoes (canned diced drained ones will work, if fresh ones are expensive), onion, celery, carrots, and just about anything else that suits you, with some oil and lemon juice.  (Google for recipes.)

         Vegetarian sandwich:  Hearty bread (pumpernickle---MMMM), cheddar or Colby slices, spinach or another dark green leafy thingie, thin sliced onion (especially sweet red onion), hardboiled egg slices, and a nice spicy salsa.  Spread the bread with mayo or butter if you think it needs it.  (This sandwich was the first to be wiped out at our last "Hoagie Party"---and we were feeding mostly MEAT-EATERS, who thought it was great!)

         How about cooked pasta (like penne, or shells), with some vegetables--cooked or not---and/or cheese chunks, seasoned with pesto (basil) sauce and eaten cold?  Or a nice low-fat salad dressing, if you don't like pesto?

         If you've got microwave reheating available, baked potatoes (reheated at school) are healthy and delicious.  How about a reheated sweet potato, stuffed with chopped apple and/or raisins, a few nuts, a bit of butter, and a dash of cinnamon?   Or an Irish (white) potato, reheated and topped with green onion bits, a few black olive slices, & salsa?  Or with a little avocado, some jicama for crunch, and some shredded spinach for color?

They're healthy, most are easy & fast to fix, and they're stuff that a real human would consider eating! (I love the Garlic-Lime Chicken and the Moroccan Chicken; my husband thinks her salmon dishes are GOOOOD.)

         Get a copy of her Saving Dinner the Vegetarian Way from the library---this is a REALLY GREAT cookbook!  If you can talk your family into trying some of the recipes from it, you can take leftovers.  (How about: Vegetable Pasta Bake, Soft Tofacos (tofu tacos), Three-Cheese Stuffed Shells, Greek Pita Pizza, Hawaiian Sandwiches, and lots of soups & stir-fries?)

  3. Just pack more snacks, you don't need to have a sandwich for it to be a lunch.

  4. well u can make your own bentos and make onigiri and stuff ^^ dont worry middle school has ton of veggie foods and high school to i reallie like the cheesey bean burrito ^^ and the fruits r yummy mac and cheese wasn't bad ...well if u want to eat healthy thats different though hmm i bought these soy nut recently lovely snack from luckys ^^ oh pack some cool fruits u like maybe asian pears they r to die for r make nachos oh they have them at school and vegetables r reallie good maybe some sushi ^^ pretzels ... bread with butter or some pasta ^^ rice is good <--onigiri hmmm u can make your own jam ^^ for fun and bring to school and stuff

  7. My daughter, now 6, loves when I pack bean dip (veg refried beans, sour cream or yougurt, salsa, black olives, lettuce, and cheese) spread in a dish with corn chips to dip. She also loves veggie sushi, usually with carrots, avocado, cucumber. Both dishes are beautiful and super yummy! :-) Hope that gives you some ideas!

  8. i have sandwhiches for lunch, i like marmite but you couldwell hate it !, pb, mashed banana with pb (it sounds stupid but try it, it makes a boring pb sandwich a whole lot more interesting and tastier), cheese, cheese and pickles, salad (not tomatoe makes the bread soggy).

    if youve tryed the stuff on my list the go to the supermarket and look and the sandwich fillers and just choose one youve never had.

    you could try having wraps/pitas/malted loaf instead of regular bread or take rivitas with something to spread on them.

  9. What kinda of vegetarian are you?? Depending on what type can help you look for recipes. I'm just starting to be one and for me its kinda hard. Try fruits like grapes, apple slices or maybe a small salad. You could also try baby carrots. Try searching online like @ goveg.com or check out barnes and noble for books.

  11. Pasta? Any kind of pasta, i like cheese, mayo with spring onions.  

  12. Have you ever tried hummus? It's very good for you, and filling :) You can spread it on anything from bread to crackers, and there are different flavors.

Sandwiches like PB and J/etc or tofurkey or lightlife deli slices with tomato and hummus, pita sandwhiches with hummus and tabouli, chicapeas and tomato, basic salad, basic cold/raw soup or stew/gazpacho, pasta salad, quinoa or couscous and beans or lentils with chickapeas, cold soup/gazpacho, roll-ups/wraps in tortilla with fixins, vegan tuna or vegan egg or potato salad, vegetables with rice, gobi aloo, vegan somen salad or other pasta salad, dumplings, samosas, small vegan bagel or pita pizzas with cream cheese and veggies.

    Sides to go with lunch: dried fruits, nuts, vegetables, fruits, applesauce, hard and soft pretzels, homemade chips (potato, kale, tortilla, corn, banana, pita, etc), seeds (sunflower, pumpkin), vegan cookies, homemade bars (like the recipes I gave you in another answer), vegan muffins, vegan brownies, granola, crackers, breads, fries, plantin, trail mix, luna bar, chips or veggies and dip.

    Sandwhich ideas:

    Tofurky or Lightlife deli-slices with hummus, or mustard, or vegan mayo, or other spread, with veggies on sliced bread, sub bread, or pita bread. Or just hummus or vegan mayo or other spread with veggies and/or fruit. Also peanut or almond butter with fruits and/or veggies such as bananas, avocado, apples, strawberries, carrots, cauliflower, broccoli, blueberries, etc. Hummus with shredded carrots and celery with a flour tortilla or pita bread. Falafel with carrots, sprouts and hummus is good. Potato salad or chickpea salad or vegan chicken salad or vegan tuna is good. Tempeh bacon, tvp crumbles, or seitan slices or chunks sand veggie sandwich's. Beans and a spread with sprouts and other veggies on a pita bread is good. Rice, avocado and peanut butter. Avocado and lettuce are almost essentials in most of my sandwiches!
