Why would universal indicator be more useful than litmus if you were working in a food technology laboratory?

universal indicator tells you the value for ph, where as litmus only shows if it is acid or base!!

Universal indicator tells you the approximate pH of a substance, while litmus only tells you if the pH changes from acidic to basic or vice versa.
