  1. Its good to start early on a science fair project because it increases your time to perform a wider range of experiments with a wider range of variables.

You should pick a science fair project based on a topic that you think you would enjoy studying most. If you enjoy biology, then you would probably like performing the experiment you mentioned. Often times people choose to work on a science fair project with the topic they are currently learning. This way they are learning a lot of the material in science class.

As for the sleep experiment, it can be a very interesting project and advanced project if you really work on it. Simple testing if people can perform better over all based on hours of sleep isn't much of a project. Measuring social patterns, mathematical intelligence, cerebral capability, as well as managing stress can make up quite an advanced project with some interesting conclusions. But this is YOUR science fair project, and you need to do what you feel is best and something you would enjoy the most. There is no use in doing a very advanced project if your not going to do well on it. Its better to get an A+ on a simple project than a C or lower on a highly advanced project.
