Science fair projects ideas having to do with baking?

yeahh so we have to do a project like this and i wanna do something with baking or cooking.

so if you have any ideas about that that'd be great!

or any other awesome ideas would be cool too.

ohh and just make sure that it has to have a manipulated variable and a responding variable.

  1. a good project might be to explain the stages bread goes through to bake scones are probably the easiest to explain the baking soda activates whe water is added 1st stage

    then when you knead it the 2nd stage activation and then when it hits the oven how much it springs up and the reasons why.

    though thats just chemistry

Several biochemistry projects could be done through cooking, depending on how science-y you are already.  For example, protein (such as egg white) changes texture and color when energy is added.  This energy can either be mechanical (intense beating) or thermal (cooking).  In both cases, the energy input serves to break the original disulfide bonds in the proteins, which allows them to reconnect with other, neighboring proteins, thus producing a solid substance instead of a liquid.

    Another that I remember fewer details of is how lipids relate to pastries, and cause them to become 'flaky' and have all the layers of dough.  You can probably look up more about it online.
