Searching for a Specific Wilted Spinach Salad Recipe

I am looking for a specific Wilted Spinach Salad recipe. I believe my sis said that she got it from a show on The Food Network, I just don't remeber which one. I cannot find this particular recipe on foodnetwork.com . At any rate, the ingredients that I do remember are real freshly cooked bacon (cut into bits), fresh bacon grease, cherry tomatoes, raspberry vinaigrette dressing, grated cheese (white, nor sure which kind), fresh uncooked spinach, and walnuts. I also know that there is no ketchup, sugar, vinegar, worcestershire sauce, eggs, or mushrooms. It's a pretty simple - few ingredient recipe. I am not much of a cook, so I need this specific recipe. It is served immediately after you pour the hot bacon grease over it. I thank you so much in advance for your help.

  1. 3 green onions

    5 slices, thick cut bacon, minced

    1/4 cup brown sugar

    1 cup black strap porter or rasberry ale, recipes follows

    Salt

    Freshly ground black pepper

    1/3 cup balsamic vinegar

    5 to 6 cups baby spinach leaves, well washed and thoroughly dried

    1/4 cup chunked and seeded cucumber

    1/4 cup diced red bell pepper

    1/4 cup crumbled Gorgonzola

    Slice onions into thin circles, using all of the white and 1/2 of the green. Saute onions and bacon until the bacon is crispy and the onions are translucent, about 5 minutes.

    Add brown sugar and stir. When that is well blended into a lumpy sticky mess, add the beer. Let this reduce for about 5 minutes, or until it becomes thick and syrupy.

    Add a pinch of salt and several turns of fresh cracked pepper. Add balsamic vinegar and combine well.

    Combine the spinach, cucumber, bell pepper, and Gorgonzola in a bowl. Pour hot dressing over the salad, toss, and serve immediately


  2. Wilted Spinach Salad with Balsamic-Honey Vinaigrette

    This sounds very much as to what you described if you just leave out the mushrooms, add halved cherry tomatoes, use raspberry balsamic vinegar, and sprinkle with walnuts!

    1 pound baby spinach leaves

    1/4 cup olive oil, divided

    1/4 pound prosciutto, cut in strips (or bacon)

    1 garlic clove, minced

    1 portobello mushroom cap, sliced (optional)

    1/2 red onion, cut in rings

    3 tablespoons balsamic vinegar (raspberry)

    1 tablespoon honey

    3 ounces Gorgonzola

    Salt and pepper

    Trim, wash and dry the spinach thoroughly and place in a salad bowl.

    Coat a saute pan with 2 tablespoons olive oil and put over medium heat. Fry the prosciutto and garlic for a minute to flavor the oil, and then add the mushrooms and onions. Saute the mushrooms and onions until they are slightly brown and tender, about 3 minutes.

    Scrape the mixture on top of the spinach, return the pan to the stove. Add balsamic vinegar and scrape up the bits at the bottom of the pan. Add remaining oil and honey. Swirl pan around for a minute to warm the vinaigrette.

    Pour the vinaigrette over the salad, top with Gorgonzola. Season with salt and pepper and serve.

  4. CRAN/RASPBERRY SPINACH SALAD  

    1 lg. pkg spinach salad leaves

    1/3 pkg goat cheese

    3/4 cup walnuts

    1/2 cup dried cranberries

    1 bottle raspberry vinaigrette

    Divide the spinach leaves onto 4 small saucers (or plates).

    Cut the goat cheese into small pieces (about the size of a crouton). Sprinkle onto of the salads.

    Sprinkle the walnuts on each salad.

    Sprinkle the dried cranberries on each salad.

    Top with Raspberry Vinaigrette.

    Note: If you want more goat cheese, walnuts or cranberries then please feel free to add them. Enjoy!!
