it is a good idea to at least have a GENERAL idea of the whole menu, so keep one with you to help answer customer's questions. Best idea is to be familiar with the MOST POPULAR items, and you will discover what those are at YOUR restaurant as time goes by. Custmers often ask for "SUGGESTIONS" as to what is "good". Offer as suggestions what YOU like, and tell them:"MY favorite is: (whatever)". They will appreciate any answer other than I DON'T KNOW, and often order what you suggest.

its good to know some of it but don't worry you can take a menu home make a copy of it AND  put it on the counter and read from it
