Question:

Shelf life of Apple Pie w/ Everclear?

I was thinking about making a drink called Apple Pie.

1 gallon apple cider

1/2 gallon apple juice

7 cinnamon sticks

1 liter Everclear

Put the cider, juice, and cinnamon sticks into a large kettle. Bring to almost a boil and then let cool. Pour in the Everclear.

Basically I was wondering about how long of a shelf life can I expect from it?

  1. It depends on what % of alcohol is in the solution. The more booze the more time it will take for bacteria to make the mix rancid. What you are making has a ton of sugar in it. Don't expect it to last more than a week or two.

  2. I'm using the everclear that's a 1 liter and 95% alcohol (they were out of the family sized bottles) I think if you stick it in the fridge you should be good for a few months, (that's being conservative).  I make home brew beer and thats usually good for at least a year (although it rarely lasts that long), but I suppose beer would be under pressure from it's own carbonation, creating a denser atmosphere within the bottle, which would help kill more micro-organisms.
