Question:

Shelf life of jarred truffles?

About five years ago, I was given a one-ounce jar of whole black truffles as a gift. I didn't know how to use them immediately, so they were neglected and kept being relegated to the back of the fridge.

My question: Are they still safe to eat? The jar was never opened, and has always been refrigerated (it says "refrigerate after opening). It's in perfect shape, and is still vacuum sealed, as evidenced by the depressed lid.

These were an expensive gift, so I hate to waste them. I also don't care if they're no longer at their prime.

Can someone out there give an authoritative answer on the safety, if not the quality, of these delicious treats? I now know how to use them, and would like to put them to use.

  1. The link below is for lots of info about truffles.  Down the page, it talks about jars having a shelf life of 3 to 4 years.  But earlier in the article, it talks about how to tell if there's mold to cut off.

    I'd say read the article carefully and then open your jar and decide.  I'd hate to see you have to throw the truffles away, but it's worse to get sick!
