  1. Wine should not "breathe" until you are ready to drink it. Otherwise, you risk maderization. That is why there has been a shift toward the use of synthetic corks and s***w-tops on wine bottles, even for the better wines. Seal the top of the cork, if you like. Just remember to store the bottles on their sides to keep the corks wet.
