I know when referring to someone from England, who is English, should be capitalized. However, when saying something like "I have doing my english homework every night" or "I like to study in english class", should the word be capitalized or not?

  1. Yes.  The word remains a proper noun even in a phrase like "English class" (referring to the language and its literature) or "English style" (referring to the way something is done in England).

  2. Yes.  In English, words derived from proper nouns are normally capitalized, and I can't think of a counterexample off hand.

  3. As far as I know, it should always be capitalized.
