Question:

Shrimp fajitas on the grill...?!?

I have uncooked shrimp to make fajitas with. I plan on marinating in some lime juice and a "fajita" spice mixture.

How long should I grill on the grill?

Also, I want to cook the bell peppers on the grill. How long for those?

Thanks everyone! :)

  1. Your peppers should cook in about 5 minutes.

Your shrimp needs about 3 minutes a side.  You want it to go from that pale gray color to a pink and brighter white color.

Sounds like your shrimp will come out YUMMY!!!  Enjoy your dinner.

  2. Unless you're using a grill basket, use 2 parallel skewers for the shrimp so that they don't "spin" when you turn them.

    Good luck!

  3. If the shrimp is fresh they are grey, when they are done they are pink.

It really depends on how you like your peppers,  I like my mushy and it takes 5 minutes or so,  it also depends on your grill.

  4. Remember, when you marinate seafood in lime juice it will start to "cook",like in ceviche.....when I marinate my shrimp I use a little bit of lime juice, fresh garlic, olive oil, salt and pepper and hot sauce....they only take a minute or two on each side, depending on how big they are.Just grill till you get a nice grillmark on each side...very simple.

As for the bell peppers...they will take longer than the shrimp, depending on how big they are cut up...brush them with some olive oil, salt and pepper, and about 3 minutes each side

  5. *Grilled Shrimp Fajitas *

    1/2 pound sliced bacon

1/2 pound uncooked medium shrimp, peeled and deveined

1 medium green pepper, cut into 1-inch pieces

1 medium sweet red pepper, cut into 1-inch pieces

1 medium onion, cut in 1-inch pieces

    1/2 cup barbecue sauce

6 (8 inch) flour tortillas, warmed

    1 cup shredded lettuce

    1 medium tomato, diced

    1/2 cup shredded Cheddar cheese

    DIRECTIONS

In a large skillet, cook bacon over medium heat until cooked but not crisp. Drain on paper towels. Wrap a strip of bacon around each shrimp; secure ends with toothpicks.

On six metal or soaked wooden skewers, alternately thread shrimp, peppers and onion. Grill, covered, over medium heat or broil 4 in. from the heat for 2-3 minutes on each side or until shrimp turn pink and vegetables are tender, basting frequently with barbecue sauce.

Remove shrimp and vegetables from skewers; discard toothpicks. Place on one side of each tortilla. Top with lettuce, tomato and cheese; fold over.
