Shutter speed on a digital camera?

I have a Fujifilm Finepiz and a Kodak Easyshare digital camera. Both have manual setting and night modes to adjust for lighting, but is there a way to leave the shutter open until I'm ready to shut it? I'm looking to take artistic pictures of moving water, lightning, light writing with a flashlight, etc. Thank you!

  1. Need specific model numbers to be 100% sure.  What you are looking for is something called bulb.  Check your menus or the manual to see if either camera has a shutter speed called bulb.  Some point and shoot cameras do, but sometimes they have a maximum time such as 15, 30, or 60 seconds, thus not really a true bulb mode.
