Simple Salad to make with chicken b*****s?

I want to make a salad with pieces of chicken, something simple, and something without mayo please!

What are some good ideas?? I was thinking a regular Chicken Ceaser Salad, however I am only planning on using lemon juice as my dressing...and a ceaser salad will not be good with lemon juice.

So any ideas??

  1. Like you said..Chicken Ceaser Salad sounds good. But maybe try doing a Asian Chicken Salad. Or a lemon chicken salad. THose are very good. Good luck!

  4. DIJON CHICKEN b*****s AND ANGEL HAIR

    PASTA

    1 c. Ranch original salad dressing

    1/3 c. Dijon mustard

    4 whole chicken b*****s, skinned and boned (pound thin)

    1/2 c. butter

    1/3 c. white wine

    10 oz. angel hair pasta

    Chopped parsley

    In small bowl, whisk together salad dressing and mustard; set aside. In skillet, saute chicken in butter until browned. Transfer to dish and set aside.

    Pour wine into skillet, cook over medium heat, stir well, 5 minutes. Whisk in dressing mixture and blend well. Serve over pasta. Sprinkle with parsley.

    CHICKEN b*****s DIANE

    4 lg. boneless chicken breast halves or 8 sm.

    1/2 tsp. salt

    1/4 to 1/2 tsp. black pepper

    2 tbsp. olive or salad oil

    2 tbsp. butter

    3 tbsp. chopped fresh chives or green onions

    Juice of 1/2 lime or lemon

    2 tbsp. brandy or cognac (opt.)

    3 tbsp. chopped parsley

    2 tsp. Dijon-style mustard

    1/4 c. chicken broth

    PREPARATION:

    1. Place chicken breast halves between sheets of waxed paper or plastic wrap. Pound slightly with mallet. Sprinkle with salt and black pepper.

    2. Heat 1 tablespoon each of oil and butter in large skillet.

    3. Cook chicken over high heat for 3 minutes on each side. Do not cook longer or they will be overcooked and dry. Transfer to warm serving platter.

    4. Add chives or green onion, lime juice and brandy, if used, parsley and mustard to pan. Cook 15 seconds, whisking constantly.

    5. Whisk in broth. Stir until sauce is smooth. Whisk in remaining butter and oil.

    6. Pour sauce over chicken. Serve immediately. Preparation time: 20 minutes.

    TIPS: You can pound chicken b*****s flat and leave flattened between sheets of plastic wrap. Wrap them airtight in one package and freeze for later use.

    GOOD SERVED WITH; Noodles with tomato sauce, steamed broccoli and a fresh salad.

    SMOKED CHICKEN BREAST SALAD

    1 tbsp. butter

    3/4 c. pecan halves

    1 1/2 qt. mixed salad greens, washed and crisped

    4 smoked chicken breast halves, chilled

    Orange Vinaigrette

    Melt butter in frying pan over low heat. Add pecans and stir until nuts darken slightly and have a toasted flavor, about 6 minutes. Pour onto paper towels to drain. Arrange an equal amount of salad greens on 4 dinner plates and sprinkle greens equally with the pecans.

    Cut each half-breast in slanting slices 1/4 inch thick. Arrange overlapping slices of each half on a plate along side of greens. Spoon vinaigrette over greens and chicken.

    OVEN SMOKED CHICKEN:

    Pour 4 tablespoons liquid smoke into a 5 to 6 quart pan. Set a perforated or wire rack in the pan. Arrange 4 half b*****s in a single layer on rack and tightly cover the pan. Bake in a 350 degree oven until food tests done, 20 to 25 minutes until white in center. b*****s should be boned and skinned.

    ORANGE VINAIGRETTE:

    In a bowl, combine 1/4 cup orange juice, 2 tablespoons white wine vinegar, 2 tablespoons salad oil, 1 tablespoon thinly slivered or shredded orange peel (colored part only), 2 teaspoons honey, 2 teaspoons Dijon mustard, and 1/2 teaspoon coarsely ground pepper.

  5. You can make Thai chicken salad by using lemon juice or lime juice ,chili sauce ,a pin of sugar and fish sauce or salt . Add some of onion ,scallion,

    then mix with your green salad .I make it all the time .

  6. An Italian or Greek style salad dressing with lemon juice rather than vinegar, also cucumber, black olives and feta cheese or gorgonzola (blue) cheese.  

  7. Romaine lettuce topped with Parmesan and lemon pepper chicken and some yummy kalamata olives and I'd probably mix the lemon juice with some Extra Virgin olive oil and spices for a yummier dressing.

  8. I love fresh fruit.  Especially something like strawberries or blueberries thrown in with the lettuce and chicken.  Maybe even a few pecans or almonds.  Try some thinly sliced red onions. A bit of feta cheese if you like that.  Looks nice and is refreshing.

  9. Why not add mandarin orange, red onion, and some either crunchy noodles or slivered almonds.
