Does anyone know a simple Senegalese recipe that is easy to make and tastes good?

  1. SENEGALESE PEANUT SOUP

    Ingredients for 2-4 servings

    100 g (3 1/2 oz.) peanuts

    200 g (7 oz.) chicken breast

    100 g (3 1/2 oz.) butter

    1 big spoonful of flour

    1 liter (4 cups) chicken stock

    100 g (6 tbsp.) heavy cream

    Method:

    In a large saucepan, make a roux with the flour and butter; add the chicken broth and bring to a boil; mash the chicken breast with the cream; put through a sieve with the chicken broth; toast the skinned peanuts; crush them and add to the soup; return to low heat until the soup thickens slightly; season generously; spice to taste and serve hot.


  2. Senegalese Lemon Soup

    Ingredients

    1 tbsp butter

    1 tsp South African Curry Powder

    2 tsp flour

    500ml chicken stock

    240ml yoghurt (typical Senegalese yoghurt is thick and sweetened but natural yoghurt can be used. Add 1 tsp honey for a more authentic taste).

    Juice of 12 lemons

    dash of paprika

    3 tbsp fresh chives, chopped

    Method:

    Melt the butter in a pan then add the curry powder and flour. Allow to cook-in for a little over a minute, stirring continually. Add the chicken stock a little at a time. Blend thoroughly and bring to a boil.

    Remove the pot from the heat and gradually stir-in the yoghurt a little at a time (this prevents curdling). Finish by adding the lemon juice. The soup can be served either warm or cold and should be served in soup bowls, garnished with chives and paprika.

    For a richer soup, add some cooked, shredded, chicken to the broth.
