Simple and Inexpensive Vegetarian Meals?

My brother stopped eating meat a while back and I wanted to know if there are any easy recipes for vegetarian meals besides maybe salads. He constantly nags our mother when she cooks lunch or dinner that he wants something without meat. So when she makes him something especially for him, he complains that "you made me that the other day, I don't want to eat that again". Later on he complains again that he is still hungry and what our mother made him wasn't good enough. I've tried to google this to find some recipes but most of the ones I find require ingredients that I am not in reach of at the store, or require my mother to spend almost twice as much on groceries. I do think he's spoiled tremendously, but once he moves out, he can feed himself.

  2. here's a fake meat recipe:  canned pumpkin, oatmeal, soya sauce and seasoning salt or barbeque seasoning

    mix all together and use for either fake meat loaf,  fake meat balls, fake burger patties!   If you like that see my blog

  3. I just started and there are tons, google vegetarian recipies and you will get great inexpensive vegetarian meals. You can make stirfry with fake chicken that you can find at health food stores, or rice, potatos with other veggies. There is actually alot you can do, humas. Most things do involve vegetables but ther are tons of things you can try. Try recipizar the website and search vegetarian they have tons of dishes. good luck. I just started and I agree I find that it is much more expensive to buy fake meats made of proten and stuff, but it should be cheaper to buy veggies instead of meat.

    beans

    rice

    spaghetti/pastas

    pasta sauces (pesto, alfredo, marinara)

    tofu (Super cheap and at all regular grocery stores like Safeway, Albertsons, etc.  You can fry it, bake it, put it in soups, anything)

    Frozen Vegetables (fried rice, stir fry, steamed with rice, soup)

    Eggs (omelettes, fried rice, fried egg sandwich)

    bread - french toast, sandwiches (grilled cheese with tomato)

    frozen waffles

    Cereal

    Canned Soup (progresso has like 5 vegetarian soups)

    Vegetarian refried beans

    "" baked beans

    ""chili make a meal with corn bread (cheap) or corn chips

    Vegetarian Pot Pie - this is SO good, I have a slice, refrigerate until it's cold and solid, then slice into individual servings and freeze: http://vegweb.com/index.php?topic=6863.0

    Here are a few ideas that might help:

    ~black bean and rice tacos/burritos (he can just add all his fave toppings: onions, green peppers, banana peppers, tomatoes, cheese, salsa, etc.) he can make quite a bit of it at a time and it lasts a while

    ~spaghetti or pasta with plain meat sauce or soy "ground beef" or meatless meatballs

    ~veggie stir fry is always a good choice. if you mom can find some veggie eggrolls that are in the greezer section, he can eat those along with his stir fry. (or he can always use some whole-wheat spaghetti and do a lo mien type deal with the veggies for a change)

    ~soups and veggie sandwiches/wraps are always easy to do. use some vegetable broth, add veggies and then make a sammie with all his fave vegetables

    ~homemade veggie pizza is good too. i don't know how old your bother is, but if he can handle something like this, he may enjoy it. plus he can eat off of it for a bit
