    1 1/2 cups sugar

    2 eggs

    1/2 cup melted butter

    2 cups flour

    2 teaspoons baking soda

    1/2 teaspoon salt

    1 can (20 ounces) undrained crushed pineapple

    (The pineapple can be sweetened or unsweetened)

    1 cup light brown sugar (For Cake Topping)

    1 cup chopped walnuts (For Cake Topping)

    Mix ingredients together and pour into a greased (and floured) 9 x 13 baking pan. Top with the light brown sugar and the chopped walnuts. Bake at 350 F. for 40 minutes.

    *THIS IS AN EXCELLENT PINEAPPLE CAKE!*

  3. Wacky Cake

    In an 13 x 9 baking pan sift together:

    3 cups flour

    2 tsp baking soda

    2 cups sugar

    1 tsp salt

    1/2 cup cocoa

    Make 3 holes in the dry ingredients.  

    In one hole put 3/4 cups oil

    In one hole put 2 tsp vanilla

    In one hole put 2 Tbsp vinegar

    Pour 1 cup cool water over the mixture and beat with a fork until smooth.  Bake 45 minutes at 350 degrees.

    You can cut the recipe in half, use an 8 x 8 pan and bake at 30 minutes at 350 degrees.

    This is a nice, very moist and chocolatey cake.

    Deep Chocolate Cake

    Ingredients

    1/2 cup unsweetened cocoa powder

    2 cups all-purpose flour

    1 teaspoon baking powder

    1/2 teaspoon baking soda

    2/3 cup butter, softened

    1-3/4 cups sugar

    3 eggs

    4 ounces unsweetened chocolate, melted and cooled

    2 teaspoons vanilla

    1-1/2 cups milk

    12 ounces semisweet chocolate pieces (2 cups)

    1/2 cup butter

    8 ounces dairy sour cream

    4-1/2 cups sifted powdered sugar (about 1 pound)

    Chocolate curls (optional)

    Chocolate-Sour Cream Frosting *

    Fresh raspberries (optional)**

    Fresh mint sprigs (optional)

    Directions

    Grease three 9-inch round baking pans, three 8X8X2-inch square baking pans; lightly dust each pan with 1 teaspoon of the cocoa powder. In a medium bowl, stir together the remaining cocoa powder, flour, baking powder, and baking soda. Set aside.

    Preheat oven to 350 degrees F. In a large bowl, beat the butter with an electric mixer on medium to high speed for 30 seconds. Add sugar; beat until combined. Add eggs, one at a time, beating for 30 seconds after each addition.

    Beat in chocolate and vanilla. Alternately add flour mixture and milk to chocolate mixture, beating on low speed until well mixed. (Batter will be thick.)

    Divide batter among prepared pans; spread evenly. Bake in the preheated oven for 20 to 25 minutes or until a toothpick inserted near the centers comes out clean. Cool in pans on wire racks for 10 minutes. Remove from pans. Cool completely on wire racks.

    Make chocolate curls, if using. Arrange curls in an even layer on a waxed paper-lined tray and set aside in a cool, dry place. To assemble cake, spread Chocolate-Sour Cream Frosting on tops of two of the layers; stack. Add top layer; frost the top and sides of the cake. If desired, while frosting is still moist, use a 4- to 6-inch wooden skewer or tweezers to lightly press chocolate curls into frosting around the bottom two-thirds of the cake. If desired, garnish top with raspberries and mint. Store, covered, in the refrigerator. Makes 12 to 16 servings.

    *In a large saucepan melt chocolate and butter over low heat, stirring frequently. Cool for 5 minutes. Stir in sour cream. Gradually add powdered sugar, beating until smooth. This frosts tops and sides of two 8- or 9-inch cake layers.

    **Chocolate-Mint Sour Cream Frosting: Prepare as above except stir in 1/2 teaspoon mint extract with the sour cream. Makes about 4-1/2 cups.

    Yellow Cake

    Ingredients

    2-1/2 cups all-purpose flour

    2-1/2 teaspoons baking powder

    1/2 teaspoon salt

    2/3 cup butter

    1-3/4 cups sugar

    1-1/2 teaspoons vanilla

    2 eggs

    1-1/4 cups milk

    Directions

    Grease and lightly flour two 8x1-1/2-inch or 9x1-1/2-inch round baking pans or grease one 13x9x2-inch baking pan; set pan(s) aside. Combine flour, baking powder, and salt; set aside.

    In a large mixing bowl beat butter or margarine with an electric mixer on medium to high speed for 30 seconds. Add sugar and vanilla; beat until well combined. Add eggs, one at a time, beating 1 minute after each. Add dry mixture and milk alternately to beaten mixture, beating on low speed after each addition just till combined. Pour batter into the prepared pan(s).

    Bake in a 375 degree F oven for 30 to 35 minutes or until a wooden toothpick comes out clean. Cool layer cakes in pans on wire racks for 10 minutes. Remove layer cakes from pans. Cool thoroughly on racks. Or, place 13x9-inch cake in pan on a wire rack; cool thoroughly. Frost with desired frosting. Makes 12 servings.

    Yellow Cupcakes: To make cupcakes, grease and lightly flour thirty 2-1/2-inch muffin cups or line with paper baking cups. Prepare cake as directed in Step 2. Fill each cup half full. Bake in preheated oven for 18 to 20 minutes or until a wooden toothpick inserted in center of a cupcake comes out clean. Cool on a wire rack. Makes 30 cupcakes.

    This is how I have been making frosting for as long as I can remember - enjoy:

    Butter Cream Frosting

    2 sticks of butter, softened

    2 cups powdered sugar

    1 tablespoon lemon juice

    1 teaspoon vanilla extract

    3-4 tablespoons milk

    With an electric mixed whip butter until creamy; add powdered sugar, lemon juice and vanilla. Combine until well mixed. Add milk by the tablespoonful until desired constancy is reached.

    For chocolate:

    Melt 2 squares of semi-sweet baking chocolate and add to the sugar butter mixture before adding milk. Then add milk by the tablespoonful until desired constancy is reached.

    Cream Cheese Frosting

    1 8-ounce package cream cheese, softened

    1/2 cup butter, softened

    2 teaspoons vanilla

    1 teaspoon lemon juice

    5-3/4 to 6-1/4 cups sifted powdered sugar

    Directions

    Beat cream cheese, butter, vanilla and lemon juice with electric mixer until light and fluffy. Gradually add 2 cups of the powdered sugar, beating well. Gradually beat in additional powdered sugar to reach spreading consistency. This frosts tops and sides of two 8- or 9-inch layers. Cover and store the frosted cake in refrigerator. Makes about 4 cups.

    Chocolate Cream Cheese Frosting: Prepare frosting as above, except beat 1/2 cup unsweetened cocoa powder into the cream cheese mixture and reduce powdered sugar to 5-1/4 to 5-3/4 cups.

    If frosting is too stiff, add milk by the tablespoonful until desired consistency is reached.

    You can use other flavors of extracts, juices such as orange juice or liqueurs if you want a more exotic flavor of frosting/icing.

    By using lemon juice you eliminate the need for salt and it also cuts down on the sweetness of the frosting - I have been doing it this way for years and everybody loves my frosting.

  6. White Cake

        1 cup white sugar

        1/2 cup butter

        2 eggs

        2 teaspoons vanilla extract

        1 1/2 cups all-purpose flour

        1 3/4 teaspoons baking powder

        1/2 cup milk

      

    DIRECTIONS

       1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.

       2. In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.

       3. Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.

    Hot Fudge Pudding Cake

    During the baking a cake layer forms on top and a rich chocolate sauce appears on bottom. Serve with vanilla ice cream or whip cream.

    1 cup Bisquick or biscuit/pancake mix

    1 cup sugar

    3 tablspoons plus 1/3 cup of unsweetened cocoa powder

    1/2 cup milk

    1 tp vanilla

    1 2/3 cup hot water

    Powdered sugar (optional)

    Mix bisquick, 1/2 cup sugar and 3 tbs cocoa in a greased 8 inch square baking dish. Stir in milk and vanilla until well blended. Sprinkle evenly with remaining 1/3 cup cocoa and 1/2 cup sugar. Pour on water. Bake in preheated 350 F oven for 40 minutes or until top is firm. Dust with powdered sugar. Serve at once in bowl with sauce spooned over cake. Make 6 servings.        


  8. SIMPLE CAKE

    1 c. raisins

    2 c. water

    1/2 c. shortening

    1 egg

    1 tsp. cloves

    1 tsp. allspice

    1 tsp. cinnamon

    1 tsp. baking powder

    1/4 tsp. salt

    2 c. flour

    Simmer raisins in water until water is reduced to 1 cup. While warm, mix raisins and all ingredients together (water included). Bake in pan (13 x 9 x 2 inches) for 25-30 minutes in a 350 degree oven.

    SIMPLE APPLE CAKE

    4 c. chopped apples, unpeeled

    2 eggs

    1/2 c. oil

    1/2 tsp. cinnamon

    2 c. sugar

    2 c. flour

    2 tsp. soda

    Dice apples. Put in bowl. Break eggs over apples and mix with fork. Add oil, cinnamon, sugar and nuts. Mix with fork. Sift flour, salt and soda and blend with apples. Mix with fork. Pour into greased 9x12 inch baking dish. Bake 350 degrees for 55 minutes.

    SIMPLE FRUIT CAKE

    1 1/2 c. flour

    1 c. sugar

    1 egg, slightly beaten

    1 1/2 tsp. baking soda

    1 (16 oz.) can fruit cocktail

    1 tsp. vanilla

    1 c. chopped nuts

    3/4 c. brown sugar

    Mix all ingredients, pour in greased pan (9 x 9 or 8 x 12 inch). Top with chopped nuts and brown sugar. Bake 50 minutes at 350 degrees. Serve with whipped cream.

    SIMPLE CHEESE CAKE

    2 lbs. pot cheese, strained

    6 eggs, put 1 in at a time

    1 1/2 c. sugar

    2 tsp. vanilla

    1/2 pt. sweet cream

    4 tbsp. flour

    Use butter when greasing pan. Mix in order given. Bake in springform pan. Bake in 400 degree oven for 50 minutes, no longer. Do not remove from oven until cold. Leave in oven to cool for 20 minutes.

    SIMPLE POUND CAKE

    2 sticks butter

    1 1/2 c. sugar

    2 c. plain flour, unsifted

    5 eggs

    1 tsp. vanilla flavoring

    Blend butter and sugar together. Add flour and eggs, alternately. Add flavorings. Bake in a tube pan at 350 degrees for about 1 hour.

    Sift first five ingredients together, add remaining ingredients. Pour into 8 inch greased and floured round pan. Bake at 350 degrees for 30 minutes, let cool and frost with your favorite frosting or confectioners sugar.

    SIMPLE STRAWBERRY CAKE

    2 c. flour

    1/2 tsp. soda

    1/2 tsp. salt

    3 eggs

    1 c. vegetable oil

    1 c. sugar

    1 (3 oz.) strawberry gelatin

    1/2 c. buttermilk

    1 pkg. (10 oz.) frozen strawberries, thawed

    Combine flour, soda and salt. Beat eggs in large mixing bowl. Add oil, sugar, gelatin and buttermilk. Stir until well blended. Add flour mixture and blend well. Drain 1/2 cup juice from strawberries, reserve for Strawberry Icing. Fold berries into batter. Pour batter into greased and floured pans (two 8 inch round or 9 x 13 inch). Bake at 350 degrees until golden brown. Cool completely.

  10. GET A REGULAR YELLOW CAKE MIX , ADD 4 EGGS, 3/4 CUP OIL AND 3/4 CUP APRICOT NECTAR.. COOK ON 350 FOR 45 MIN... THE NECTAR JUST MAKES IT REALLY MOIST.. WE DON'T USE ANY ICING BUT YOU CAN TAKE THE REMAINING NECTAR FROM THE CAN AND MIX IT WITH POWDERED SUGAR AND DRIZZLE ON IT..  

  11. QUICK AND EASY PINEAPPLE UPSIDE CAKE

    1/4 c. butter

    1 c. brown sugar

    1 can crushed pineapple, well drained

    1 pkg. yellow cake mix

    Maraschino cherries (optional)

    Melt butter and divide equally into two 8 or 9-inch round cake pans. Mix drained pineapple and sugar and spread over butter. Press cherries (cut in halves or quartered) into pineapple mixture.

    Mix cake mix according to package directions. Pour over pineapple mixture and bake according to package directions. Sells well at bake sales.
